German Christmas dinner: Sausages with potato salad

Although this is a rather simple dish, sausages served with potato salad is a very popular Christmas meal in Germany. Children generally like it and it is quick and easy to prepare, even in large quantities, leaving all the more time for exchanging gifts, going for a walk or Christmas Mass.

(serves 4)

5 large waxy, unpeeled potatoes
6 gherkins
1 red onion
2 tbsp olive oil
3 tbsp white balsamic vinegar
2 tbsp of chopped dill
2 tbsp of chopped chives
1 tbsp of chopped parsley
150 ml water
salt and pepper
1 tbsp mayonnaise
6-8 Vienna or Bockwurst sausages

Preparation of the Christmas dinner

Boil potatoes in their skin and leave to cool slightly. Then peel the potatoes, cut into slices and place in a dish. Cut the gherkins into thin slices. Peel and finely chop the onion. Add both to the potatoes in the dish. Carefully mix in the mayonnaise.

Combine the water, olive oil, balsamic vinegar, salt and pepper to make a dressing. If the dressing is too acidic, you can also mix in up to 1 tsp sugar to taste. Pour the dressing over the potatoes. Now finely chop the dill, parsley and chives, sprinkle over the top and stir well. Leave to marinate for at least 20 minutes before serving or even overnight.

Heat up the sausages in hot water in a pan large enough for them to be able to move about freely. Don't let the water come to the boil otherwise the sausages will split!
